A simple awning advertises Le Saint Amour’s whereabouts and invites you to experience the gastronomical creativity of its chefs as they portray Canada’s finest provisions for their culinary masterpieces.
Upon entering the main dining room, your eyes are drawn skyward past the red woodwork, murals and mirrors to the large Jurassic size ferns hanging from the glass ceiling. Romantic lighting glows softly giving the illusion of intimacy.
Red tuna seared and sliced to perfection with coconut milk sabayon.
Snow Crab ravioli trilogie with pasta made from nori (seaweed), squid ink and coral. The Mascarpone cheese, basil and sea urchin cream sauce was exceptional. My favorite: the squid ink pasta.
Red deer from Domaine Boileau with carmalized apples (on left) and leeks sautéd with fine spices, Yukon Gold potatoes with thyme and poivrade (pepper) sauce with foie gras.
Sweetbread and giant shrimp on a dome of cooked swiss chard stems and leaves, seared morrel mushrooms and Samos Muscat creamy sauce.
Pistachio and wild blueberry crème brulé with a marshmallow flambé – a unique sweet and tangy twist on this classic French dessert.
